Nisha Vora—the vegan chef and author behind Rainbow Plant Life—recently shared the recipe for her No-Bake Cookie Dough Bars, and they’re just as good as they look. Using simple pantry ingredients—including Medjool dates, rolled oats, maple syrup, and vegan chocolate chips—it takes minimal time and effort to put together a tray of bars that look like they were made by a pro baker. Except there’s no baking needed here.
After combining the ingredients and letting the cookie dough firm up in the freezer, they’ll be ready to eat in 30 minutes or less. Considering they’re also gluten-free and oil-free, they’re the perfect health-friendly treat to gobble up any time of the day, or take with you for on-the-go snacking.
