Confession time: I’m a huge pancake lover. It’s been that way since I was little, mostly thanks to my dad making a big batch every weekend. As an adult, I’ve definitely upped the health-factor of my stacks—ditching the eggs, butter, excess sugar, and white flour—but that doesn’t mean I still don’t crave the sweet stuff. And one vegan food blogger just so happened to come up with a mix that’s the best of both worlds.
Caitlin Shoemaker of From My Bowl recently shared a recipe on Instagram that combines everyone’s two favorite breakfast staples: pancakes and cinnamon rolls. Not only do you get the fluffy pancakes you know and love, but they also spiral in a sweet cinnamon filling and are topped with a creamy cashew cream cheese icing.
“Any day is a good day for pancakes in my book, especially when it involves these cinnamon roll pancakes,” Shoemaker writes. “Made with simple and wholesome ingredients, these babies are vegan, gluten-free, and refined sugar-free—including the healthy cream cheese icing.”
