Growing up, boxed mac and cheese was everything. And let’s be real—it’s pretty epic as an adult, too. As good as those iconic blue boxes used to be, there’s a new-and-improved version that’s totally vegan-friendly and easy to make right at home.
Finding vegan mac and cheese is getting easier, but it’s still not that easy. That’s why now that I’ve discovered a homemade mix that’s just as good as the original, I’m planning on staying stocked at all times. Even though plant-based dietitian Whitney English, RD, had kids in mind when creating the recipe, it checks out for comfort food-loving adults, too.
“This stuff has been saving my life lately. It’s sort of like Kraft, but way healthier,” she wrote on Instagram. “You can prep a big batch of this mix and store it in the fridge for up to six months. I guarantee it won’t last that long, though. Then when you need a quick and easy dinner, you just add it to pasta with a little non-dairy milk. I like to add riced broccoli to ours for a pop of veg.”
After the mix is made and ready to go—which includes raw cashews, nutritional yeast, turmeric powder, paprika, and onion powder, among other ingredients—dinner can be ready in 10 minutes or less. Basically as long as it takes your noodles to boil. Now once my organic dinosaur shapes arrive from Amazon (I’m channeling my inner five-year-old, okay?), I’ll be good to go.
