A typical grilled cheese really only has two prime ingredients: bread and cheese. It’s not rocket science. Unfortunately, despite being completely mouthwateringly delicious, that melty goodness is still junk food at best. But what if you could make the ultimate comfort food a little healthier by adding in a handful nutrient-dense ingredients?

Ellie Bullen, the Australian blogger behind Elsa’s Wholesome Life, recently shared the simple way she amps up her grilled cheese—or, as she calls it, her “vegan toastie.” And it’s bound to make your stomach growl. Instead of using regular bread, she first switches things up with some sourdough, which contains gut-friendly probiotics. And although she does add in a bit of vegan mozzarella (how can you resist?), the real stars of the show are actually the veggies piled on top.

Extra creaminess between those pieces of bread come from roasted pumpkin, avocado, and pesto. Then there’s also tomatoes and a dash of red pepper flakes for a some heat. With the addition of these simple—and highly-nutritious!—plants, you’ll never want to go back to the traditional version ever again.
