I’ve always loved donuts. Growing up, my mom and dad would pick up a box of them on weekends…and let’s just say my sister and I would devour as many of those sprinkle-covered, cream-filled goodies as we possibly could. Now that I’ve discovered a much healthier version, I might have to reinstate that beloved tradition.
Jordan Younger, the plant-based blogger behind The Balanced Blonde, recently shared a recipe on Instagram that’s free of salt, oil, and sugar—three things you probably didn’t think you’d ever see a donut recipe without. “These donuts are next-level,” she writes. “I’ve been craving them, so I’m excited to have these to snack on. They’re even healthy enough to eat for breakfast.”

The Balanced Blonde’s Healthy Vegan Donuts
Ingredients:
—1 1/4 cup buckwheat flour
—1/2 cup carob powder
—1 cup pumpkin purée or baked and mashed sweet potato
—1 cup plant-based milk of your choice
—1/2 cup sugar-free dark chocolate
—1/4 cup maple syrup
—1 tsp vanilla extract
—1 tsp baking powder
—1 tsp baking soda
Directions:
1. Mix together ingredients and bake at 375 degrees for 25 minutes, or until nice and fluffy.
2. Top with 1/2 cup melted sugar-free dark chocolate. Just dip the tops of the donuts in once they’re baked and cooled.
Note: If you don’t have a donut pan, you can make them as muffins, too.
