Chef Chloe Coscarelli’s 4-Ingredient Alfredo Sauce Will Make You Love Tofu

If you’re still not so sure about tofu, that’s about to change. Chloe Coscarelli—the famed vegan chef behind Chef Chloe & The Vegan Cafe in Miami and the Supernatural pop-up in New York City—has an easy-to-make Alfredo sauce that uses the popular plant protein as its main ingredient.

Most vegan Alfredo sauces are made using cashews. But this version requires no soaking, has the perfect creamy consistency, and is just as tasty as anything that’s loaded with dairy. According to Coscarelli, you only need four ingredients—and very minimal effort!—for a mouthwatering plant-based take on the classic.

In an interview with Well+Good, she said to start by sautéing some onion and garlic, then add them to a blender with a package of tofu and a squirt of lemon juice. After everything is nice and smooth, it’s ready to pour onto your pasta and devour. No wonder why it’s one of her favorite weeknight meals.

I don’t know about you, but I definitely know what I’m making for dinner tonight.
