If you’re trying to cut down on carbs, pizza—with it’s soft, doughy crust—isn’t exactly the best food choice. That’s exactly why you should be reaching for a block of tofu instead.
Tofu is typically served cubed, but Gia Macaroni—the vegan-keto foodie behind Makeshift Mermaid—came up with the genius idea of turning it into a bread-free “toast.” Since posting her avocado tofu toast recipe on Instagram in May—that involves slicing tofu, adding some avocado oil, and baking it in the oven at 30 to 40 minutes at 390°F—the tactic has went on to inspire other creative uses. Including maybe one of the most delicious of all time: healthier pizza bites that couldn’t be easier to make.
After baking your tofu toast, Macaroni recommends topping it with ketchup and vegan mozzarella. (You could also use tomato sauce or marinara.) Next, pop it back in the oven to melt the cheeze. What you’ll be left with is a protein-packed pizza option that’s so good you’ll forget you’re eating a soy-based crust in the first place.
