Even as an adult, I still need convince myself to eat my veggies sometimes. Sure, I love them, but doesn’t vegan mac and cheese always sounds so much better? Thankfully, there’s a trick that will help even the pickiest eaters—no matter their age!—eat more greens: drizzling on a pretty pink sauce that’s loaded with flavor.
Alex Aldeborgh, MS, RDN, a dietitian and the healthy food blogger behind Daisy Beet, shared two of her top tips for teaching people how to love vegetables. One is roasting them in the oven, which makes them more flavorful and gives them a crispy texture. And the second is using a fun sauce.
“Master a few sauces to drizzle over cooked veggies. A good sauce transforms even steamed veggies into something really delicious,” she writes. “Some of my favorites I have in my back pocket are peanut sauce, sesame ginger sauce, and pesto. Sauces may seem intimidating, but they’re actually quite simple and come together quickly.”
Nothing compares to Aldeborgh’s new favorite recipe, though: her Ginger-Beet Tahini Sauce that only requires a handful of nutritious ingredients, including tahini, lemon juice, pure maple syrup, cooked beets, lemon zest, fresh ginger, and salt. After drizzling it on some perfectly-roasted carrots, you’ll have an irresistible plate of veggies to devour.
“This ginger beet tahini sauce is super creamy, zingy, and versatile,” she says. “It would be great served with other vegetables, drizzled on a grain bowl, or as a creamy salad dressing!”
Yep, I’m sold. Expect all my veggies to be slathered in pink sauce from now on.
