Air-Fried Buffalo Cauliflower Gnocchi Might Be My New Favorite Thing

You can do so much with Trader Joe’s beloved cauliflower gnocchi. Up until this point, I’ve only slathered the vegan staple with marinara and a creamy cashew-based Alfredo sauce. But one thing that’s never even crossed my mind is putting it in the air fryer and turning those little low-carb bundles of joy into buffalo wings.

Cori Finglass, the Atlanta-based recipe developer behind Matcha & Margs, recently shared a meal on Instagram that made my stomach growl…like, a lot. With only a few ingredients, she transformed her cauliflower gnocchi into crispy mini vegan wings—a genius trick she says she picked up from fellow recipe creator Megan Borys of Donut Worry, Be Healthy.

“I had some air-fried buffalo cauliflower gnocchi the other night with celery and dipped them both in my favorite avocado oil Ranch,” Finglass writes. “They’d be perfect for a party appetizer, an easy healthy meal, and so much more.”

So exactly how did Finglass go about making this simple dish? Because the gnocchi is already prepared and ready to cook with, it only took a total of 25 minutes—and hardly any effort!—for dinner to be served.

“To make these, I air-fried the gnocchi for 20 minutes on 400°F with a little garlic avocado oil spray,” she writes. “After 20 minutes, I took them out and coated them in a generous amount of Frank’s RedHot then put them back in the air fryer for another 5 minutes. Then these magical babies were born.”

I mean…I don’t know about you, but I know exactly what I’m making for dinner tonight.
