Whether you’re a salad person or not, there’s no denying they make for amazing meals. I mean, how else can you pack that much healthy goodness into one simple dish? The only downside is all those vitamins and minerals from leafy greens, plant-based protein, and healthy fats can easily be overshadowed by unhealthy toppings. But who needs croutons when you can get that beloved crunch from chickpeas?
While store-bought croutons are downright delicious, they’re usually fried and packed with fat, excess sodium, and dairy. Luckily for salad-eaters everywhere, Amélie Balland, the Paris-based vegan lifestyle blogger behind Amelie Tahiti, recently shared a recipe for her crispy Chickpea Croutons, and they might just be the healthiest salad topper of all time.
Making a batch of chickpea croutons is easy. All you need to do is rinse, drain, and dry your chickpeas, load them up with a savory blend of spices—including thyme and garlic powder—and bake them in the oven. Once they’re cooled, you can store them in a container to use all week long.
