Roasted Radishes Are the Tasty Side Dish You Didn’t Know You Needed Until Now

I snack on radishes on a regular basis. The crunch satisfies just as much as potato chips (okay…almost as much!) and the high water content keeps me feeling hydrated all day long. Despite my love of the root veggie, it’s never crossed my mind to cook them. Not even once.

Sapana Chandra, the plant-based cook and author behind Real + Vibrant, recently shared a recipe that proves radishes can be roasted to perfection just like some of your other produce aisle favorites.

“While fresh radishes can taste a little sharp and peppery, roasting them makes them taste milder, juicy but crispy on the outside, and brings out their natural sweetness, she writes on Instagram. “They’re perfect for spring and make for an easy, healthy, and delicious side dish or addition to any salad.”

The process of roasting radishes is simple, too. In her recipe, Chandra only uses a handful of ingredients to up the flavor: avocado oil, fresh parsley, lemon juice, garlic, and salt and pepper. Then after 25 to 30 minutes in the oven at 425 degrees, they’re ready to devour. With minimal effort, you’ll wind up with a delicious dish, and a super-healthy one at that.

“Radishes are high in nutrients and packed with vitamin A, B6, C, E, and K. They’re high in fiber, antioxidants, and rich in minerals,” Chandra writes. “Radishes are also known to help lower blood pressure, cleanse the kidneys, and provide hydration, as well as help reduce inflammation and boost the immune system.”

Well, it sounds like my radish consumption is about to increase big-time. Watch out, farmers markets—I’m coming for you.
